Recipe: Hangover Omelet

I needed a place to start storing my growing collection of home-made successes in the kitchen so I figured this was as good a place as any.

Today’s triumph was what I’ll dub Hangover Omelet. Not because it will help you get over one but because I was in rough shape when I made it.

Ingredients:

  • 1 avocado
  • 1/4 onion
  • 2 eggs
  • 4 strips bacon
  • 1 tsp butter
  • 1/2 cup milk
  • 1 tsp red chili flakes

Directions:

  1. Chop the avocado, onion and bacon and add to a heated iron skillet with butter. Let simmer until onions start to darken (but not brown).
  2. Pre-heat the oven to 350F.
  3. Whisk eggs and milk. Add ground black pepper to taste.
  4. Pour eggs/milk mixture in pan evenly.
  5. Bake in oven for 15 mins or until edge of omelet browns.
  6. Remove and top off with red chili flakes to taste.

Serves 2 (or 1 really hungry person). Enjoy with toast and choice of juice (this part helps the hangover). Enjoy!

  1. ha, I will try this out once I figure out how to unlock my oven…even though I don’t really need the oven to make this…I just think that I should unlock it before I do anything else…
